Mustard Cauliflower Pickle
This is delicious especially on cold meat and an old NZ favourite.

Ingredients
- 1 Large cauliflower
- 4 onions
- I red capsicum
- 5 cups vinegar
- 2 cups sugar
- 2 tablespoons mustard
- 2 tablespoons curry powder
- 1 tablespoon tumeric
- ½ cup cornflour
Instructions
- Chop all vegetables into small even sized pieces. Place all ingredients except flour into saucepan. Bring slowly to the boil ensuring sugar is dissolved. Boil for ½ hour until vegetables are tender. Mix cornflour to paste with small amount of vinegar, add to vegetable mixture. Return to boil, cook for further 3 minutes. Pour into warm sterilized jars, cover & label.
